First of all, you need to know why it explodes. The reason is that when fishing, the fishing net quickly pulls it out of the water from the deeper waters, and the internal pressure change cannot keep up with the external pressure. Then, boom. In other words, if it floats up slowly, it can reach shallow water.

The principle of self-destruction is similar to that of human decompression sickness. The gas in the body fluid quickly turns into bubbles due to the change of air pressure. The main effect is gas embolism. In severe cases, some small blood vessels will burst. For example, the gills will be damaged. Internal injuries and internal bleeding are not a big deal. Some can be disemboweled. It may be that there are gas bodies in the digestive tract. I am not sure. However, the power is definitely not enough to explode into a ball of fireworks. So of course it is intact. The explosion is an exaggeration. In fact, it is internal injuries.

As an aside, in fact, many products in the fishing industry can be caught alive, such as hairtail. If you slowly float up, the hairtail can be alive when it comes out of the water. However, it is not necessary. Live hairtail often means lower efficiency and higher costs. So there is no live hairtail. Self-explosion is the direct cause, but the fundamental reason is that there is no need to have live hairtail.
