CATDOLL: When are clams at their fattest?

They are the fattest when they first arrive (before they are washed with water). If the stall owner keeps them in water for more than 2 days, they will become thin. I usually buy them and raise them myself. I never buy those that have been raised.

Cold water oysters, hot water clams.

Oysters are fat when the weather is cool, and clams are fat when the weather is hot.

They are fattest in spring, which is usually the breeding season. When the weather gets hot, they won't be fat anymore!!

Now is the season for eating flower clams, but we stop eating them after the beginning of autumn.
